Caramelized Bananas

4 Bananas
60 g Hazelnuts, toasted and ground
25 g Fresh bread crumbs
1/2 cup Vegetable oil, for deep frying

Sauce :
20 g Butter
150 g Soft brown sugar
4 tablespoons Water
300 ml Coconut milk

Peel the bananas and cut them in half lengthways, then cut each piece in half again,
Mix together the hazelnuts and breadcrumbs in a dish and coat the banana pieces well, pressing the crumbs on to them. Heat together all the sauce ingredients in a small heavy based saucepan, stirring all the time until you have a caramel sauce. Heat the oil in a deep-fryer or saucepan to 190oC (375oF) and fry the bananas in batches, for 2 minutes or until golden brown. Remove the bananas on to kitchen paper to drain. To serve, place the bananas on individual dishes and pour over the warm caramel sauce
