Fried Egg Noodles in Sauce

500 g Thin dry egg noodles
2 tablespoons Soy sauce
1 tablespoon Sesame oil
150 g Shrimps (shelled, deveined and rubbed with a little salt and cornstarch)
150 g Chicken meat, sliced
2 Chicken gizzards, sliced
90 g Pork liver, thinly sliced
30 g Chives, cut into 2 inches length
3 Dried mushrooms, soaked and thinly sliced
1 teaspoon Cornstarch, blended with 3 tablespoons water
4 tablespoons Cooking oil

Seasoning :-
250 ml Chicken stock
3 tablespoons Soy sauce
1/4 teaspoon MSG (optional)
1/4 teaspoon Pepper
1 teaspoon Sesame oil
1/4 teaspoon Salt

Lightly scald egg noodles in boiling water. Remove, drain and mix well with 2 tablespoons of soy sauce and 1 tablespoon of sesame oil. Heat oil in pan. Spread the noodles in it and fry till one side is lightly browned. Turn over and brown the other side. Transfer to a large serving plate. Heat 3 tablespoons more oil and fry chicken and shrimps till color changes. Add gizzards, mushrooms and chives. Season with soy sauce and stir fry for a little while. Pour in stock and bring to boil. Add pork liver, MSG and salt to taste. Cook till liver is just done. Thicken sauce with cornstarch mixture. Stir in sesame oil and pepper. Pour sauce over the fried noodles and serve hot.
